Our Quality-First Process

We’re passionate about producing exceptional olive oil. Our approach is meticulous, efficient and focused on preserving the true character of your fruit.

  1. Harvest & rapid handling — Olives are shaken from the tree and processed without delay to help protect freshness and flavour.
  2. Wash — Fruit is thoroughly washed to remove debris and impurities.
  3. Crush — Olives are funnelled into the hammer mill to create a clean olive paste.
  4. Malax — Paste is gently mixed in one of our two heated malaxing tanks for at least one hour, encouraging oil droplets to combine.
  5. Extract & refine — Oil is separated and then twice filtered through the decanter and separator to help remove remaining impurities.
